    Hi Ramona and everyone!

    Granola for the Soul is just that ---satisfies your food craving while allowing you time to gather your thoughts for the day.  Actually, granola is my evening dessert rather than a breakfast food.  You won't be disappointed with KateSinging's recipe, Ramona.  I started off with the 2 cups of oats, doubled it the next time and this last time I quadrupled it!  I also added dried banana chips ---yum.

     How cool!  I  love thinking of these giant batches of granola because the truth is, you can't have enough of it - and it's great for sharing.  Sort of like soul, come to think of it!

    I'm in a cooking mood myself these days.  My brother and I went out for lunch at a health-food shop this week, and the young chef working in the back was turning out everything healthy and delectable:  gorgeous vegetable lasagnes, burritos made with sweet potato, corn, black beans, and cheddar, all kinds of quiche, and truly decadent tahini chocolate chip cookies. The smell was heavenly!  And the kitchen looked as exciting, busy, and productive as an art studio.  So many kinds of creating we can do in this life...

    My mom used to make up a two-cookie-sheet batch of this every couple of weeks.  She would store it in two huge Folger cans and we would all eat it for breakfast for a week, or on top of ice cream.  Beware calories, though!!!  Whew.  But I believe with a little bit of balance, the stuff can be magical ... energy-wise that is!!

    Something I had to share....

    My hubby was in the mood for baking bread the other night.  He had baked one scrumptious loaf of raisen bread, and had an Irish bread recipe on the go.  In comes me, thinking that the loaf was done baking in the bread machine and out on the rack cooling so I pulled the cord.  Uh oh! Big mistake!  It was the raisen bread that was cooling not the Irish bread.  Soon as I pulled the cord, all h # l # broke loose....no going back to square one.  Hubby was not happy with wifey at this point.  To make a long story short, I landed up baking the Irish bread in the oven and all was well...Whew.  Anyone heard of minding one's P's and Q's (I'll never learn).

     This morning I made muffins with oats, applesauce, chopped ginger, raisins, and lots of cinnamon and allspice.  The nicest thing about them is the surprise in the middle - strawberry jam spooned in before putting the tops on.  I found them quite tasty with a cup of chai.

     They are super-healthy, full of fiber, low-fat, and packed with anti-oxidants and goodness.  The only trouble?  They're too healthy and my true love will hate 'em!

     Has anyone tried "Skyr"?  It's a thick, creamy, low-fat, high-protein yogurt made from enlightened cows in Norway.  (Well, the farmers are enlightened anyway).  I can only get it at a Whole Foods shop an hour away but it's worth the trek.

    This isn't really a recipe so much as a hint:  fresh blackberries and kiwi fruit topped with vanilla Skyr.  Yow!

    Waste Not, Want Not Recipe

    If perchance you should inadvertantly kill a loon and you
    do not want to waste the meat of the creature, it may
    be prepared in the following manner:

    Take a granite pot
    Fill it with water
    Add one small granite pebble to the pot
    Clean carcus of loon, put into pot and boil over fire or stove
    Season with salt and pepper to taste.  The creature is cooked
    and ready to eat when a fork is able to penetrate the rock.

    ...when a fork is able to pentrate the rock?  This would make a great diet dish.  Hmm

    For some reason, my beloved and I have frequently reverted back to Sunday breakfast rituals.  When we first got married, a bachelor friend of his left him with a recipe for waffles, which he made for us for a while.  We got a waffle iron and that was fun.  The next few years, we found a little man-and-wife restaurant called "Hearts" and he loved their heart-shaped pancakes (I always went for the French Toast).  Then one New Years Day, I made Banana-Blueberry Muffins for him, and that was "all she wrote".  My man fell deeply and irrevocably in love with my muffins.  Ever since then, I have made a batch of 12 jumbo's each week, and he heats a couple of them up in the microwave for himself each morning with his coffee. 

    As a sidebar, one summer, we had a little joke which I shared with friends and neighbors.  If you did your math above, you can see that a batch does not quite last through the week, as he gets 12 each batch, and eats 2 each day.  Sometimes during a week, I won't have time to do another batch, and he goes a day without.  Inevitably, the next day that he had muffins, he would say, "MMMMMH!!! Did you do something different?? They taste especially good this morning."  So, knowing that they only tasted extra good because he had gone without them an extra day, I teasingly made up a "secret ingredient" that I couldn't tell him about.  He was dying to know the secret ingredient, and looked high and low for something in the pantry or refrigerator that he thought might be it.  Eventually, I finally told him that the secret ingredient was only the waiting and anticipation.  Heck, I get to enjoy some fun for being the baker! 

    He brags about these muffins, and how I make them for him, frequently and often to his friends and family.  For me, that is the reward.  I take a lot of pride in them now.  Any "effort" preparing them each week, when I might be tired of being on my feet, is amply offset by the pleasure that I get, thinking of them as my unselfish gift of love to my sweetie.  His enjoyment of them and the gratitude he expresses more than compensate:

    SOOZ' MUFFINS OF LOVE

    This recipe uses two JUMBO muffin pans, and makes 12 jumbo muffins.

    A few days before, set aside two good and ripe bananas. 

    The morning of cooking, put out two sticks of margarine, to soften to room temperature. 

    Ingredients:

    2 cups all-purpose flour  --- 1-1/2  cups whole-wheat flour  ----- 1-½ tsp salt ----- 1 tsp baking soda ----- 4 tsp baking powder ----- 2 sticks (1 cup) margarine ----- 2 very ripe, soft bananas ----- 1-½ good quality maple syrup ----- ½ cup egg substitute or 2 eggs ----- 1-½ cup soymilk ----- 1 tsp vanilla ----- 1-½ cups frozen blueberries

    Preheat oven to 400°.  Prepare muffin pans either with cooking spray or Jumbo muffin liners.  In a large mixing bowl, combine all dry ingredients.  Stir to blend.  Add soymilk, egg, maple syrup, and vanilla.  Stir with spoon.  Add softened margarine and bananas to the bowl. Use a dinner knife to cut into chunks, then use mixer to blend entire mix.  Do not make completely smooth; leave the consistency of chunky peanut butter.  Add blueberries and stir with spoon only, to distribute evenly.  Spoon batter into muffin pans.  Bake 24-29 minutes.  Let cool completely.  Refrigerate to keep fresh.

    The sausage is Chicken-Apple Sausage and it makes this soup absolutely delicious.

    Mmmmm....I love homemade soup.  Soup recipes often make a hefty portion so there's always some to freeze for an evening when the cook needs a night off!  I'd love to try this one, Julie, but I'd really have to hunt for chicken-apple sausage.  It must give the soup a milder taste - am I right?  Love beans and cabbage so I'll hunt for the sausage.  Thanks for sharing with us.

    As an aside, did anyone try my loon recipe (and live through it)?!!

     I never did try the loon soup, Chameleon, but I'm an old fan of stone soup which is made in much the same way - but with slightly less fuss!

    KateSinging - if your recipe would turn me into Queen of the May I'm going for it!  It does sound dee-vine but won't my lips be tinged purple?

    I have an inside secret, one I just found out about by snooping in all the right places.  Aunt Bobby has a recipe to absolutely die for................

     Chameleon, those purply lips are all the rage for Queens of the May!  Or, you can opt for a stain of strawberry if you prefer.

     Aunt Bobby's recipe sounds divine, though rather a lot of work.  All that cornbread stuffing takes time to make...

    But I hope we get invited over when she cooks this up!  I'll bring Queen of the May fruit salad, and you can bring your delicious loon soup.
